오랜세월 대대로 운영되는 장인의 노포가 많은 「교토(京都)」
유명한 노포가 밀집되어 있는 교토 시내에
특별히 오뎅으로 유명한 가게가 하나 있어요.
바로 「우네노(うね乃)」라는 이름의 오뎅전문점 이에요.
이 곳은 1903년(메이지 36년)에 맛국물 제작용의 건어물을
판매하던 가게로 시작하여, 오늘날에는 맛국물로 만든 오뎅을
함께 판매하는 가게로 발전하게 되었어요.
가게의 입구는 유명세에 비해 아주 소박한 분위기를 가지고
있는 것 같아요.
점내는 세련된 디자인의 오픈 키친과 카운터 석이 위치해 있어요.
오랜세월 이어져 내려 온 노포인 만큼, 오뎅을 삶을 때 사용하는
맛국물과 손님상에 내어드리는 맛국물을 철저하게 분리해서
사용한다고 해요.
전통적인 오뎅은 물론, 치즈가 들어간 퓨전형태의 오뎅도 함께
판매되고 있어요.
